Warm, jammy cherry tomato confit layered on a pillow of whipped feta and nestled onto golden crostini—it’s an effortless showstopper. These crostini hit all the notes: salty, tangy, sweet, creamy, crisp. Plus, the confit and feta can be made in advance, making this a stress-free favorite for dinner parties, picnics, or just Tuesdays.
🍒🍅 Cherry Tomato Confit Crostini with Whipped Feta
Ingredients (Makes ~12 crostini)
For the tomato confit:
2 cups cherry tomatoes (any mix of colors)
4 garlic cloves, smashed
5–6 sprigs fresh thyme
Zest of ½ orange (or lemon, if you prefer)
½ cup olive oil
Salt & pepper to taste
Optional: pinch of chili flakes for subtle heat
For the whipped feta:
6 oz feta cheese, crumbled
2 oz cream cheese (or Greek yogurt for a tangier option)
1 tbsp olive oil
1 tbsp lemon juice
Fresh cracked black pepper
For the crostini:
1 baguette, sliced into ½-inch rounds
Olive oil for brushing
Flaky salt (optional)
Instructions
Make the tomato confit: Preheat oven to 300°F (150°C). In a small baking dish, combine cherry tomatoes, garlic, thyme, orange zest, and olive oil. Season with salt, pepper, and chili flakes if using. Roast uncovered for 45–60 minutes, until tomatoes are soft and just beginning to burst. Let cool slightly.
Make the whipped feta: Blend feta, cream cheese, olive oil, lemon juice, and black pepper in a food processor or with a hand mixer until smooth and creamy. Adjust seasoning to taste. Chill until ready to use.
Toast the crostini: Preheat oven to 400°F (200°C). Brush baguette slices with olive oil and arrange on a baking sheet. Bake for 7–10 minutes, flipping halfway through, until golden and crisp. Sprinkle with flaky salt if desired.
🍽️ To Assemble: Spread a generous layer of whipped feta on each crostini. Spoon warm tomato confit (with some of the flavorful oil and garlic) over the top. Garnish with a thyme leaf or extra zest if you're feeling fancy.
💡 Serving Ideas: Serve on a platter with a small bowl of the leftover tomato oil for dipping.
