This Carrot & Lentil Stew was a first for me. Ingredients:
2 tablespoons olive oil
1 yellow onion, finely chopped
3 garlic cloves, minced
1 teaspoon cumin

3β4 large carrots, peeled and chopped
1 cup red or green lentils

1 can diced tomatoes (14.5 oz)
Salt & black pepper to taste

Instructions:
