🥩 Set-It-and-Forget-It Chuck Roast (Olivia-Inspired)

This is my favorite kind of dinner party main: minimal prep, maximal payoff. Inspired by Olivia Adriance’s famously unfussy method, this chuck roast lets the oven do the heavy lifting while you go live your life (or set the table, or pour a glass of wine).
Ingredients
1 chuck roast (4–4.5 lbs)
Kosher salt
Freshly ground black pepper
Instructions
Preheat oven to 300°F.
Generously season the chuck roast on all sides with salt and pepper.
Place the roast in a heavy-bottomed roasting pan or Dutch oven (no lid).
Transfer to the oven and cook for 3½–4 hours, until deeply browned on the outside and fork-tender inside.
Let rest 20–30 minutes before slicing or pulling apart.
Notes
You’ll know it’s ready when a fork slides in easily and the meat pulls apart instead of slicing cleanly.
This roast is forgiving. If it goes a little longer, it only gets better.
Serve with something bright and fresh to balance the richness.
