Ingredients

  • 1 large fennel bulb, very thinly sliced (reserve fronds)

  • 2 oranges, peeled and segmented

  • 2โ€“3 Little Gem lettuces, leaves separated and torn

  • 3 tbsp extra-virgin olive oil

  • 1โ€“1ยฝ tbsp fresh lemon juice

  • Kosher salt and freshly ground black pepper

  • ยผ cup pistachios, toasted and roughly chopped

  • Shaved Parmesan, to taste

Instructions

  1. Toast pistachios in a dry skillet over medium heat until fragrant, 3โ€“5 minutes. Let cool, then chop.

  2. In a large bowl, combine fennel and Little Gem lettuce.

  3. Whisk olive oil, lemon juice, salt, and pepper to make a bright vinaigrette.

  4. Add oranges to the bowl, drizzle with vinaigrette, and toss gently.

  5. Finish with pistachios, shaved parmesan, and fennel fronds.
