This salad is here to do important work. Crisp fennel, juicy oranges, and Little Gem lettuce bring brightness and crunch, while pistachios and shaved parmesan add just enough richness to stand up to a winter roast.
Ingredients
1 large fennel bulb, very thinly sliced (reserve fronds)
2 oranges, peeled and segmented
2โ3 Little Gem lettuces, leaves separated and torn
3 tbsp extra-virgin olive oil
1โ1ยฝ tbsp fresh lemon juice
Kosher salt and freshly ground black pepper
ยผ cup pistachios, toasted and roughly chopped
Shaved Parmesan, to taste
Instructions
Toast pistachios in a dry skillet over medium heat until fragrant, 3โ5 minutes. Let cool, then chop.
In a large bowl, combine fennel and Little Gem lettuce.
Whisk olive oil, lemon juice, salt, and pepper to make a bright vinaigrette.
Add oranges to the bowl, drizzle with vinaigrette, and toss gently.
Finish with pistachios, shaved parmesan, and fennel fronds.
Notes
Dress right before serving to keep everything crisp.
Serve cold or at cool room temperature for the best contrast with warm dishes.
